Meatball Sandwiches

Now that it's almost winter and the weather has dipped way down into the 50s at night, I wanted to make something warm and hearty to sustain me. I have not had a meatball sandwich in a long time, and that sounded really good.

I bought a bag of frozen meatballs from Trader Joe's. These aren't the best meatballs around (my favorite come from the local butcher shop but they were sold out) but they are cheap, easy to make, and pretty tasty. I had a bottle of pasta sauce in the fridge with roasted garlic and sweet basil, my favorite food combination (other than barbecue and beer, obviously.)

I simmered the meatballs in a wok for about 20 minutes with the pasta sauce. When they were done I put them on some Trader Joe's "panini rolls" with American cheese and lots of parmesan, wrapped it in foil, and baked it in the oven for about 15 minutes. It came out slighly toasted with the cheese nice and melted. I thought it was really good. I couldn't even eat the whole sandwich by myself... but luckily my little buddy was willing to help out.

  1. Yes, "winter" must be arriving in Pasadena about now. It's about 20 degrees every night here in Boston, m-----f-----r. Thank God I don't ever have to sit in traffic, ever, and my lifestyle in a major city is now entirely affordable. Otherwise I'd be pissed.
