Elizabeth said she would like BLTs for dinner. This is kind of misleading - in all the times I've made them, I've never once added tomato, unless we count the time I used Sir Kensington's. (Which I don't.) There is nothing wrong with a bacon and lettuce sandwich, but I was thinking it could use something else. And then I noticed a package of Trader Joe's pancetta in the fridge.
It's not against the rules to double up on bacon, is it?
So I sauteed the pancetta and set it aside, then cooked the bacon, and placed them both on white bread with mayo and lettuce.
It was, obviously, fantastic.

It's a good thing they weren't English. Muinimula isn't nearly so catchy.
