I love Del Taco's fried shrimp tacos so I wanted to try their new "Beer-battered fish tacos." I was disappointed - the batter was soggy and the fish tasted like a mediocre fish stick. Not exactly surprising for a fast food chain, but considering what a good job Del Taco does with their shrimp tacos, I was hoping for a little more.
For dinner I picked up a one-pound piece of halibut at Whole Foods.
I drizzled butter over it and added salt, pepper, and smoked paprika.

I wrapped it in foil and roasted it.
Then topped it with a grilled corn, green onion and cilantro relish.

That looks fab. How long did you roast it, and at what temp? Also, please share the relish recipe.
